Simon Van Wassenhoven studied in Diest with the organist Van den Broeck, one of the teachers of Jacques-Nicolas Lemmens. Already at age seventeen Van Wassenhoven could boast of three prize-winning symphonic pieces. In 1837 he was appointed as organist at the deanery church of Sint-Niklaas. He composed plenty of songs and piano works. Simon Van Wassenhoven was the teacher of his sons Gustaaf and Theodoor.
